Are you ready to dip for New Year’s? Here’s an amazing Caramelized Onion Dip that will make you SWOON!

Notice: I used the word SWOON above. I just had to after reading an article about 15 things (or 20, I don’t even remember) that food bloggers should stop doing in 2015. One of them was use the word “swoon” in a blog post. I was like, geez, I haven’t even used the word “swoon” one time. Can I even consider myself a food blogger anymore? So, I figured I’d better end the year with a bang and throw it in there for old times’ sake. Mission Accomplished.

Ok, back to business. One awesome thing that I love about my passion for food is that I have an amazing husband that shares that passion with me. In fact, I’m proud to admit that he is the genius behind many of the fabulous dishes that come out of my kitchen! He just has a knack for putting together flavor combos. Also he is a fabulous maker of pancakes! There are quite a few recipes on the blog already that I can attribute to Ben: brown butter chocolate chip cookies, homestyle chicken pot pie…..and now this amazingly fabulous caramelized onion dip!

I don’t know how to explain the flavor of this onion dip. It’s anything but your standard. And itdefinitelygrows on you. It’s like you take a bite and you’re like, yum. And then like 5 minutes later, you realize what an amazing flavor hit your taste buds and you are like….Y.U.M. Did I mention that there’s a bit of cayenne pepper in there to zest it up? MORE YUM.

The dip doesn’t just come together in minutes…you gotta take some time to let those onions caramelize baby! But, it really is pretty hands off. You mostly throw the onions and spices together, and then let it all simmer on the stovetop for about 30-40 minutes, just checking on it occasionally. After the soft caramelized onions cool down, you puree it all up and mix it with a creamy base. Nice thing is you can put it together ahead of time. In fact, the flavor blooms more as it sits, so I actually like it more the next day.

Ingredients

  • 1tablespoonextra virgin olive oil
  • 1tablespoonunsalted butter
  • 2large sweet onionsdiced
  • 1/2cupbeef broth
  • 1tablespoonWorcestershire sauce
  • 1clovegarlicor 1/4 teaspoon garlic powder, minced
  • 1teaspoonsugar
  • 1/4teaspoondried thyme
  • salt and pepperto taste
  • 8ouncescream cheeseroom temperature
  • 16ouncessour cream
  • 1/4 - 1/2teaspooncayenne pepperdepending how spicy you like it

Instructions

  1. Heat olive oil and butter in a large pan over medium heat until butter is melted.

  2. Add onions, beef broth, Worcestershire sauce, garlic, sugar, thyme, and salt and pepper. Stir to combine.

  3. Turn up heat to high until broth starts to come to a boil.

  4. Turn heat back down to medium and cook, stirring occasionally, for 35-40 minutes, or until onions are very soft, dark, and brown. (If it appears that the onions are starting to burn, turn the heat down to medium-low heat.)

  5. Remove from heat and let cool completely. (To speed it up you can put the onions and juices in a bowl or in the blender jar.)

  6. Once cooled, placed caramelized onions and juices in a blender (I like to use my Blendtec).

  7. Puree until smooth.

  8. Add cream cheese and blend until smooth.

  9. Add sour cream and blend until well combined.

  10. Add cayenne pepper to taste and blend to distribute evenly.

  11. Put dip in serving bowl and sprinkle cayenne on top (if desired).

  12. Serve with crackers, chips, other bread, or vegetables.
