Steak Ssam with Spicy Pickled Cucumbers

The yummiest dinner plate I ever did see of steak ssam with spicy pickled cucumbers! Steak ssam marinated with soy sauce, onions, garlic, mirin, gochujang, sesame oil, scallions, ginger and rice wine vinegar. Set with some spicy pickled cucumbers, sticky rice and ssam sauce – all to be put in crunchy butter lettuce cups. My dream meal. This is legitimately one of my favorites recipe right now, and maybe on the blog, ever? It’s so simple, but something about it feels so filling, so light and SO good.

You can MOST DEF just eat this with rice, but there is something about the crispy crunchy lettuce that makes this real special.

Here’s how it GOES:

  • marinated steak with TONS of flavor
  • homemade pickled cucumbers, that are to-die for!
  • steamed white rice
  • ALL wrapped is fresh, crisp lettuce wraps with ssam sauce/ssamjang.

In conclusion: YOU MUST make this. It’s like KBBQ in a plate, and can be served up at home!

What is ssam?

Ssam translates to “wrapped”. Ssam is a Korean dish that is usually some form of meat that is “wrapped” with lettuce, bibb lettuce leaves, butter lettuce!

What ingredients do you need to make this steak ssam?

Steak or beef: We are using New York steak for this, but you can also use flank steak, skirt steak, or hanger steak. Sliced beef works great too!

For your marinade:The steak is marinated in soy sauce, white or yellow onion, garlic, mirin, gochujang, sesame oil, fresh ginger, scallions and rice wine vinegar.

Cucumbers:We are marinated the cucumbers is vinegar, chili flakes, sugar, sesame oil, soy, hot sauce, sesame seeds and garlic.

What else can you serve with this dish? Sometimes I will do some kimchi and ssamjang served with this!

Wrap all the above with white rice and crunchy greens!

Instructions to make this steak ssam

Marinate your steak or beef

To begin, place all your marinade ingredients in a bag with the steak in the fridge. Set aside for 1 hr-overnight.

Marinate your cucumber

Make your cucumbers by slicing and mixing them all together. Set aside for 1 hr-overnight.

Grill your steak and serve

Heat a skillet OR a grill with vegetable oil on medium high heat. Once piping hot, remove your steak from the marinade and add into the skillet. Set a timer for 3 minutes for the first side and let it char. Flip the other side for another 3 minutes, let it rest, slice and serve with your cucumbers!

Ingredients

For the Marinade

  • 1 12 oz New York steak, hanger steak or flank steak works too
  • 3 tablespoons soy sauce
  • ½ white onion, roughly sliced
  • ½ tablespoon minced garlic
  • 1 tablespoon mirin
  • 4 tablespoons gochujang
  • 2 tablespoons Sesame oil
  • 1 bundle scallions, roughly chopped
  • ½ tablespoon fresh ginger, pealed and chopped
  • 1 teaspoon rice wine vinegar

For the Spicy Pickled Cucumbers

  • 4 Persian cucumbers, sliced in rounds
  • 1 teaspoon rice wine vinegar
  • 1 teaspoon Korean chili flakes
  • 1 teaspoon sugar
  • 1 tablespoon sesame oil
  • 1 tablespoon soy sauce
  • 1 tablespoon hot sauce
  • 1 teaspoon sesame seeds
  • 3 garlic cloves, roughly chopped
  • salt to taste
  • Serve with steamed white sticky rice, butter lettuce cups and ssam sauce

Instructions

  • To begin, place all your marinade ingredients in a bag with the ribeye. Set aside for 1 hr-overnight.

  • Make your cucumbers by slicing and mixing them all together. Set aside for 1 hr-overnight.

  • Heat a skillet with vegetable oil on medium high heat. Once piping hot, remove your steak from the marinade and add into the skillet. Set a timer for 3 minutes for the first side and let it char. Flip the other side for another 3 minutes, let it rest, slice and serve with your cucumbers!
