  • 2 fresh mangoes, diced
  • 14 cup crushed pineapple
  • 14 red bell pepper, coarsely chopped
  • 14 green bell pepper, coarsely chopped
  • 1 jalapeno pepper, seeded and minced finely (optional)
  • 2 tablespoons extra virgin olive oil
  • 1 clove garlic, minced finely
  • 1 shallot, finely diced
  • 2 tablespoons chopped fresh cilantro, or parsley or 2 tablespoons parsley
  • 2 teaspoons fresh lime juice, or lemon or 2 teaspoons lemon juice
  • 12 teaspoon red pepper flakes (optional)
  • salt and pepper (to season)

  • Mix together all ingredients in a bowl.
  • Serve with chips or over grilled tuna, salmon, chicken or pork!

  1. this is delicious and very refreshing. i did cut the oil down to 1 tsp, i usually omit it from salsas, and i substituted fresh basil for the cilantro- the fresh ingredients this time of year are marvelous!

  4. Yummy! This is similar to a mango salsa that Baja Fresh has on their salsa bar occasionally. Next time I think I will try pureeing a small amount of the mango to make the salsa a little more liquidy.

  5. ...yet another 5-star review for you!!! = )Made this tonight with an almost over-ripe mango and an almost under-ripe one....made exactly as written....ok, so I used a red and yellow pepper, not a green one......green would make it prettier I believe....I made this for dinner tomorrow (either tilapia or scallops)...but it may not last that long!!!!! This stuff is SO good!

  1. Yummy! I had to substitute a can of peaches for pineapple, but still was wonderful! I also had no lime or lemon juice, so I just used some of the peach juice. Used only 1 tsp of olive oil and the cilantro really made it all come together...thanks for the recipe!

  2. I made this to go with some broiled sea bass actually, we grilled it on the bbq. I didn't use any garlic but I did add about two tablespoons of minced ginger. I also used red onion instead of the shallots. Easy and delish!

  4. This was great. Had to use orange bell pepper instead of green, added x-tra jalapeno, out of cloves-used garlic powder, didn't have shallot-used green onion, used cilantro and parsley, didn't have red pepper flakes. Turned out wonderful. I put a layer of baby spinach leafs and kale, added grilled chicken breast marinated with "McCormick Grill Mates Mojito Lime Marinade" with a little lime juice, then topped all with salsa. Wow! Was excellent, can't wait to fix this one again.

  5. After having mango salsa at the Cheesecake Factory with their shrimp dish, I was looking for a similar salsa to serve with our grilled salmon and shrimp dinner last night. Unfortunately, I didn't like the salsa too much with the shrimp and it was just ok with the salmon. But I have to give it 5 shining stars because this salsa is super with tortilla chips. I just polished off the last of the salsa and wish I had more! I did make a few changes: skipped the green bell pepper that I didn't have; substituted red onion for the shallot; and added in some cumin to tone down the sweetness of the mango. Thanks Rita... I'll have to make this the next time I entertain.
