Cream of Soup Mix Recipe

When I look at a can of any kind of “Cream of….” soup mix at the store, all I see is MSG, too much sodium, too much dairy, etc. And then I look down and see the price and think, “Do I need this?” and I end up leaving the store without my canned soup and making something different for supper.

Another big issue in many of these canned products is their amount of salt or sodium. If you can make them yourself, you can control this amount.

I know that you can buy canned soup varieties without MSG. But they are so much more expensive, and when you are on a budget, it’s hard to fit that price into your weekly food limit.

This Homemade Cream Soup Base Mix is so simple to put together and is a great replacement for those canned condensed soup products in casseroles and your other favorite dishes. It’s also shelf-stable, so you don’t need to take up precious space in your fridge or freezer. Place it in a quart-size mason jar, seal it with a plastic lid, and label it.

This recipe is for homemade cream of chicken soup; if you prefer to leave the chicken broth out, there are recipes below for other variations, including one that can be used for all of your cream of recipes.

How to Make the Cream of Chicken Soup Powder

That’s it! To make up a liquid batch of your own cream of chicken soup substitute, mix 1/2 cup of the mix with 1 1/4 cup water or milk. You should be able to substitute it in any recipe with cream of chicken soup.

Heat the mixture in a small saucepan over medium heat on the stovetop until it comes to a boil or simmer and thickens. You could also add it directly into your meal or casserole without cooking first if you know that it will be able to thicken in the oven.

To use this in place of cream of mushroom, add a few mushrooms to whatever dish you make along with the liquid mix.

  • 1 cup Chicken Broth

This is a great way to make a cream of soup recipe if you need a dairy-free version because you can replace the milk with a milk alternative.

This combo won’t be as thick as the canned or mix versions, but it works great if you are in a bind or if you don’t want to buy the cans. You can always warm it up and add some starch to thicken it up.

  • 2 Tablespoons dried Onion Flakes
  • ½ teaspoon each of dried thyme, dried basil, dried parsley, and black pepper

How do I make my soup more creamy? ›

The best options for thickening soup are cream or half and half. Plain yogurt or even freshly grated cheese works well and adds an extra layer of tangy, salty flavor. Add the dairy at the end and avoid bringing the soup to a boil since this can cause yogurt, cheese, or cream to split.

What is the best thickener for cream soup? ›

The best item to thicken a soup is some sort of starch, whether from flour, cornstarch, arrowroot, or even a lot of potatoes. If it is a powder, mix it with cold water and stir to make a smooth, lump-free paste, and stir constantly as you add it to the soup.

What type of thickening agent is most commonly used for preparing cream soups? ›

Roux (pronounced roo) is a mixture of equal weights (parts) of flour and fat (usually clarified butter; chicken fat, bacon fat, and margarine are also used) cooked over medium heat and stirred constantly. Roux is the most common thickener for sauces and soups.

Can I use sour cream instead of cream in soup? ›

Sour Cream, Crème Fraîche, or Mascarpone

These three ingredients can be used in place of heavy cream with a one-to-one substitution with just a few caveats. Sour cream will add tanginess to your dish, and if you use it for soups or other hot dishes, it's best to add it in at the end to avoid curdling.

What is the main concern to avoid when adding cream to a cream soup? ›

Fat-free half-and-half or low-fat milk would most likely curdle. You need to be careful even with the cream. If you started the soup with broth, stock or water, I would wait until the end to add the cream. You can warm the cream, or “temper” it, which is what I do.

Can I use milk instead of cream soup? ›

Cream and milk can be used as substitutes in soup recipes, but it will affect the texture and flavor of the soup. Milk is a thinner liquid than cream and is generally used to add a creamy texture to soups without the added fat content. It will also give a slightly tangy flavor to the soup.

Can you substitute sour cream for cream of chicken soup? ›

Can you substitute sour cream for cream of chicken soup? If you're short on time and you don't have a can of cream of chicken soup, sour cream works just fine! It won't have a chicken-forward flavor, but one cup of sour cream creates the same texture and body as a can of cream of chicken soup.

What can I substitute for cream of chicken or cream of mushroom soup? ›

I use chicken broth for the cream of chicken soup substitute. To make a heartier soup, like the cream of mushroom, I use beef broth. Sometimes I like to add in a little shredded chicken, sliced mushrooms, celery, etc. Use your imagination.

Why does my cream chicken soup get watery? ›

The solution to this problem is to either utilize more of the roux or slurry, or to utilize a roux or slurry that contains more starch. Another reason that cream soups can become watery is that the vegetables or other ingredients in the soup continue to emit moisture through the cooking process.

Which sauce is most likely to be the base of a cream soup? ›

In classic cuisine, thin bechamel sauce is often used as the base for cream soups and can be substituted for veloute in many cream soup recipes, if desired.

Is soup base the same as stock? ›

Simply put, a cooking base, according to Wikipedia, is a “concentrated flavoring compound used in place of stock for the creation of soups, sauces, and gravies.”

What is used as the base for most soups? ›

Base. A good base ensures every soup starts well. Begin with a medium onion and chop in a few basic vegetables to give a rounded flavour. A combination of one carrot, one stick of celery and one leek works well.

Is soup base and broth the same thing? ›
