When it comes to the holidays, I’m all about the side dishes. I rarely host holiday meals so when I’m looking for something to bring, I turn to side dishes because they’re so easy to make and take with me! But sometimes at home, I find myself slacking on making them with our meals.

HOW TO COOK CARROTS

There are SO many different ways to cook carrots. You can go the sweet direction or make them savory too! When it comes to the carrot side dish, I love how versatile recipes can be! You’re probably familiar with using brown sugar to make glazed carrots. Did you know you can substitute maple syrup for brown sugar?

If you haven’t tried it, you need to! This recipe is your chance!

For this recipe, you will be making roasted carrots in the oven. It’s a simple process and once the carrots are in the oven, you can work on other parts of the meal. Whether you’re using whole carrots or learning how to cook baby carrots, the cooking process will be the same! You’ll just want to watch for your desired tenderness to know they’re done!

HOW TO MAKE ROASTED GLAZED CARROTS

As I mentioned before, this recipe has a very simple ingredient list. You only need four ingredients! You might have them all in your kitchen right now!

  • Baby carrots (you can also use whole carrots)
  • Maple Syrup
  • Butter
  • Salt and pepper

That’s really all you need to make these delicious carrots!

If you’re using whole carrots instead of baby carrots, be sure to wash and peel them. I recommend using a Y shaped Peeler to make that job easier! Once you’ve peeled the carrots, chop or slice them into pieces of similar size.

If you’re using baby carrots, I recommend cutting them in half. I do this to save on cooking time. You don’t have to do it though! If you cook them whole, you might want to add 10 minutes to your cooking time, depending on how soft and tender you like your carrots.

Then combine all of the ingredients in a bowl and toss them to mix them well. You want the carrots well coated!

Put the carrots on a baking sheet lined with foil or parchment paper and roast in the oven for 20-30 minutes! I do stir them around about halfway through the cooking time.

HOW LONG TO ROAST CARROTS AT 425°F

I used to oven roast my carrots at 400°F but I’m always looking for easy ways to save time. I like to serve these with chicken and it can cook up fairly quickly. So I started roasting my carrots at 425°F.

Roasting them at the higher heat works just as well and shortens the cooking time. I usually roast them for 25-30 minutes total.
