A Delicious Creamy Coleslaw that makes the perfect side dish for grilled meats and barbecues.

Homemade coleslaw is so easy to make, and you don't even have to chop up all that veg, most grocery stores sell bags of ready made coleslaw mix, which is usually a blend or raw shredded cabbage and carrots.

I like the addition of red onion in mine, as it adds great flavour, so I also slice up some red onion very thinly and mix that in too.

I like to use a reduced fat olive oil mayonnaise as it's flavour is just as good as the regular stuff but for much less points. Mixed with yogurt, lemon juice and a little maple syrup and seasoning I really don't notice the difference from the ready made creamy coleslaw you can buy.

Perfect side for grilled meats, barbecues, picnics and more. I love some with my KFC Fakeaway Feast

Also for variation you can add some curry powder, or skip the maple syrup and add in some grated apple instead for the sweetness.

Coleslaw

A Delicious Creamy Coleslaw that makes the perfect side dish for grilled meats and barbecues.

Ingredients

  • 3 cups of slaw mix (shredded cabbage and carrots)
  • half a small red onion, thinly sliced
  • 2 tablespoons of low fat mayonnaise
  • ½ cup (120ml) of fat free plain yogurt
  • juice of half a lemon
  • 1 tbs of maple syrup
  • salt and black pepper to season
  • optional - add a sprinkling of curry powder and some grated apple for a curried version

Instructions

  1. Place all ingredients in a bowl and mix well to combine.
  2. Store in a lidded tub in the fridge for up to 1 week

    Made this coleslaw today and it was lovely, missed out the mango chutney, I didn't have any but in doing so reduced the syns. I would not have believed that it would have tasted so nice. Thank you so much for all your recipes, I have the beef stroggonoff in the slow cooker for dinner tonight.

    I've just made this to go with our bbq chicken skewers (loosely based on a chicken kebab). I used red cabbage and added some fresh coriander (cilantro). It tastes amazing! Thank you Siobhan
