Lettuce wraps are my go-to healthy dinner. They’re easy to make, come together quickly (usually no more than 15 minutes), they’re tasty and I always feel healthy after eating them. If you’re looking for new lettuce wrap recipes or ideas, you’ve come to the right place! I make lettuce wraps several times a week and I’m always finding new recipes and ideas to make them even better. Below are a few tips on how to create a delicious lettuce wrap at home with leftovers. I’ve also shared some of my favorite paleo and vegetarian lettuce wrap recipes.

Step One: Choose Your Greens

There are a verity of greens you can use to make healthy lettuce wraps at home. Ice burger lettuce is great for burgers, romaine lettuce is a good choice for wraps or boats and cabbage and collard greens can be used for making cabbage rolls and tacos. I love to use collard greens when I make my wraps. They do need to be prepped ahead of time though. I usually make a batch on the weekends to have on hand during my busy work week.

To prep your collard greens, you’ll need to wash them. Then you’ll boil them for 2-3 minutes, just long enough to soften them. Dry the collard greens with a towel. Store them in an airtight container to reusable bag.

Step 2: Pick Your Protein

Adding high quality protein (like grass-fed meat) to your lettuce wrap will help you to feel full longer. There are many options to choose from. I usually use leftover protein from our dinners throughout the week. Taco meat, grilled chicken, hammer patties, and lean turkey are great choices. If you’re diet is plant-based, try adding lentils, humus, legumes and sprouted brown rice to your wraps. The picture above is my collard green wrap filled with sprouted brown rice, pinto beans, avocado, bell peppers, carrots and cilantro. It tasted amazing!

Step 3: Add Some Color

Now it’s time to up the nutrients in your wrap! Add healthy plant-based fats like avocado and olives, sprinkle in some shredded carrots and cauliflower rice and add tomatoes, onion and cilantro on top. These veggies will not only make your wrap healthier, but they add a ton of flavor too! I chop and slice my veggies up once a week. When I have them prepped ahead of time it makes it easier for me to add them to my meals.
